Panj-āb · five waters
Why Panjab, not Punjab
Panjab is the faithful spelling of the original Persian panj-āb: five waters, for the five rivers that cross the land this food comes from.
British rule respelled it Punjab, and that version stuck to maps and menus. At home the word never changed, so our sign keeps the older one.
